Cedar Grilling Planks – If you are looking for something that is a bit out of the ordinary, then cooking on cedar grilling planks may be just what you are looking for.

Cedar grilling planks are most often used to cook salmon but other meats can be enhanced by this cooking method as well. The cedar grilling planks will saturate the food with an aromatic smoke flavor that is really quite tasty. Vegetables can be cooked on the boards too. In fact, you can prepare an entire meal on cedar grilling planks.

The type of wood that you use is important. Be sure to use Western Red cedar grilling planks. Eastern wood is not safe to cook on, it can contain toxic resins! The boards are generally only about ½ inch thick, 6 inches wide and 12 inches long. The size will vary and it’s really not too important as long as your food will easily fit onto the board.

Start by soaking the cedar grilling planks in water for several hours before cooking on them. This will help prevent the board from catching on fire and it also helps keep the meat moist during cooking. Submerge the cedar grilling planks in the sink, tub, or large pan. Use a weight to hold the boards under water. A pan filled with water works well.

Before cooking, pat the cedar grilling planks with a towel to get rid of the excess water, brush the cooking side of the board with olive oil or vegetable oil. Then add your food directly onto the cedar grilling planks.

Preheat the grill to a moderately high heat. Place the cedar grilling planks on the grill, being careful to keep them from coming into contact with direct flames. We want the boards to smolder, not catch fire. Keep a water spray bottle handy in case the boards catch fire. If the cedar grilling planks continue to catch fire, either turn the heat down, or relocate the boards away from direct flame. This method of cooking is by indirect heat so there is no reason to flip the food. Normal cooking times are 20 to 25 minutes but this will vary depending on what you are cooking and to what level of doneness you are looking for. I suggest using a
meat thermometer to accurately judge when the food is done.

For a unique presentation, you can serve the food right on the cedar grilling planks. Simply put the boards on a heat resistant serving tray and place it on the table! The appetizing aroma will bring the guests running.

When done, don't throw the boards away. Break them up into small pieces and use them as wood chips in your smoker pan or directly on the charcoal fire next time for that great smoky flavor.
