Roasting Pan – Designed to withstand high heat, they can be made of aluminum, glass, silicone, ceramic, stainless steel, or enamel. Most are several inches deep and can roast deep dishes of meat or vegetables.
Many people prefer a metal roasting pan because they conduct heat very well. You can get them in varying depths and some come with a metal rack that will let the juices drain away from the meat. Using a rack will insure the meat is evenly crisped and there will be no soft spots due to the food being in contact with the bottom of the roasting pan. The depth is important and it will affect how the meat cooks. If the sides are too high, the hot air will not reach the bottom of the food and the meat may cook unevenly. If the sides are too shallow, the drippings will easily spill when you try to move the roasting pan. A roasting pan with sides about three inches tall is a good all around choice.

Disposable aluminum roasting pans are very popular for grilling due to the fact that there is no cleanup afterward. The down side to aluminum is they are thin and flexible and this makes them easy to drop or spill the juices as you remove them from the grill. Consider using a cookie sheet or pizza sheet to slide the aluminum roasting pan onto when removing it from the grill. This will give it the extra support needed and make it much safer to move.
Strong handles are important on a roasting pan. This makes it much easier to move it from place to place. Weather your roasting pan has handles or not, it is wise to wear a pair of good quality oven mitts when handling it.
